I picked up two boxes of AoBR and traded my marines away to get a boatload of Boyz, Deff Coptas, and Nobz. I also picked up a couple Trukks the same day. As I searched around on Dakka, I found a couple lists that would let me field any army using these guys with only a few additions (I'd only need to build the 3 Battlewagons). This is based roughly off a list Stelek posted back in July, but with the deletion of a Trukk Squad and the addition of a bunch of Deff Coptas.

Here's a question, though - would it be worthwhile to drop one of the 3 Deff Copta units entirely to give the remaining Big Bomms?

I think you'll be happier with max units of Deff Koptas. And you should have 1 klaw in there. Big bombs are meh.
