This is my 500pt Menoth List as it currently stands I was hoping for some advice on how to use it better and also what to consider taking to expand to 750pts

If you are willing to make a purchase, temple flameguard + the unit attachment make a great addition to any protectorate army. Maxing out your zealots and choir would be a priority for me as well. You're fine on jacks, the HR doesn't really need anything other than a devout and a revenger. While I like idrians I've found that they don't really mesh well with the HR/ToM because they often are deployed too far away for me to gather souls. Same goes KEE except that I don't like them in any list. Vengers are another option because of the synergy with the HR's feat but are pricey. At 750 I would take the third rack as well.

Mercs:
Add a piper immediately. They really should just change the card to read "Piper of Menoth" because that's what he is. With so much you have so much to gain for so few points.

Aiyana and Holt are really really good and I consider taking them in every list I make.

A modest proposal (based on what you have)

See if you can add 4 Zealots using some kind of model or proxy. The unit with the UA
gets more out of a full unit than a partial one due to the fact that it gets better as models
die. Add the third wrack and you're pretty much golden until you can start to buy stuff to
replace the expensive KEEs.

Any time you make a list you might as well maximize your list since they still give up the same VP's anyway. i.e. your Zealots and mono bearer might as well be 10.

If you're worried about VPs, then you're playing a tournament. Right now, the standard for WM/H tournaments is Steam Roller 4.0. In SR 4.0, it's a good thing to take a lot of victory points because you don't earn VPs by killing enemy models anymore. You earn them by holding objectives at the end of the game. The more VPs you have on the objective, the more VPs you earn.

But I still agree with maxxing out the Zealots or infantry units in general. Most units are more effective with more members.
