in a "normal" IG all comers list, how many Melta squads
would you suggest taking? i'm thinking 3, but will that be
enough? how many hard targets do you plan on taking out?

Are you referring to special weapons squads? I don't use them because they're restricted troops. Otherwise I definitely would. If they're support for your command squad you can include two, which I guess would be better than one if you expect to come up against a lot of tanks, but if you're using a doctrine point and throwing in lots, then it would depend on how many tanks you're expecting to come up against, and what else you're including that has a reasonable chance of taking out a tank. If thats all you're including that's going to fire at tanks, then I'd say the number of squads you take should be about 75-100%of the number of tanks you expect to be up against.

if that's what someone uses, then yes. Vet and HQ/Plt. HQ squads also.
i'm asking how many melta squads would/do you use in a general list
that you don't know what you'll be facing.

Need 3 Meltas in a 5 man vet squad or for better kinda

Do HQ with 4 Meltas-- Landraider/Mono. Deepstrike them both next to it and shoot 7 times get 3-4 hits then that should kill with 2 d6 and +1 AP

I wouldnt even bother with special wepon squads, they get shot up to easy.

Although vets are some of the coolest tank hunters in the game if you equip them right.
3 meltas and the sgt. with melta bombs can do some damage for very little points.

And if you are thinking meltas in your infantry squads then forget it. My friend tried that a couple times and it's not even worth considering. You never want to be that close to anything worth melta-gunning with your guardsmen.

Course, that won't work as well against the mono(lith) since you only get 1d6 penetration against it.

For the OP, two or three, my personal preference is hardened vets. Three melta shots at BS 4 on the deep stirke is quite nice, and quite inexpensive pointswise. Also, in Kill Point games they only give up one KP where that command squad with four BS 3 meltas will give up two KP.

One melta and or one flamer per command squad.

Your command squad has a chance, normally its primary role is for the leadership bubble, so you can melta one squad up and move it, maybe two if you immobilise the company HQ.

Otherwise I keep my command squads cheap and in the back, I like to swap around the specials they get to get a minor deterent effect along the whole of the rear.

For tank shooting, 12" is too close. You need lascannon and plenty of them, meltaguns are NOT a substitute.

Now if you have a drop troop list the opposite is true, take meltas anywhere you can, and ignore all heavy weapons infantry.

I generally take 1 melta squad per ~500pts. Seems to be about enough, not enough for super tank-heavy lists, but typically enough to drop a melta squad on each enemy tank against a balanced enemy list.

That's the rationale of adults, isn't it?
That we should just forget things that are inconvenient to remember.

I think that Sylph nailed it there. 1 squad per 500 points. you should have some long range AT weapons as well, so it's not like they'll be killing all of the tanks on their own.
