I was playing against my space marine friend and I assaulted his terminators with my Nobz...

because his terminators had powerfist that would double the toughness of my Nobz, the nobz die with one blow to the face...

for the sake of combat resolution(who won combat) does instakills count as 1 wound dealt or 2 because they killed a Nob...

2 because its the number of total wounds caused.

This situation is clearly covered in the rulebook on page 39 under "Determine Assault results".

exatcly 2 wounds. On another note if you have multiple nobs you have to take instant death on unwounded models first.

Only if the Nobs have exactly the same wargear. You assign wounds to groups of identically-equipped models. This can allow you to assign the powerfist hit to a "group of one" even if it already had a single wound.
