I played against SM, Eldar, Orks, and necrons but none have made so many of my troop choices look like a joke. they took warp blasts like nothing and cause my gaunts to come back (without number) more then the Orks did. My stealers rending rolls where nearly useless and they got picked off by ranged be4 they could do much and it left me with only my tyrant and brood lord.

i didn't have warriors or a fex and i don't know if that would have mattered too much

I'm all out of idea's

i think the red terror is about the only thing that could work against them

and yes gaunts wont do much here.

Even though it's only 1,000 pts I'd still use warriors to get some templates thrown down, what's the daemon guy's list?

1000 pts Tyranids (Kraken or Swamp Paint Scheme, don't know yet).

You definitely want to take a fex or two, dakkafex would work nicely pouring wounds in to a squad, who cares about the ap if they have invulns anyway.

After that mobility is the key, keep kiting their heavier and slower units around the table whilst laying shots in to their weaker targets.

Just remember that even though daemons have invulnerables, they're in the 4 or 5 range, and making daemons take saves is the best way to whittle them down for me. Taking (as Anim and the Warboss said) warriors with deathspitters are an excellent thing, especially with strength upgrades and scything talons. A S6 shot is wonderful and having 3 S5 attacks means they can hold their own if the have to until they can get some support. They're flexible and durable if used correctly, but I'd definitely get some pie on the board. And after that, get some barbed stranglers on some fexes to thin out the bloodletters/plaguebearers/horrors.

The horrors reduceced my stealers down to nothing but my brood lord. I think that some ripers with wings or leaping would help that problem.

I give my warriors twinlinked wepons when i can because I can useualy protect them from cc .

i havent tryed useing a dakka fex yet but wouldnt a tyrant be able to get more shots off or is he just better off with something else?

and ill get the list when i get my codex out so i can get his list names right.

Demons are expensive. They are excellent against MEQ's but can in turn fall to numbers. Use your higher initiative for assault, and cheap shooty to force those saves. Beware of getting locked up with chariots, bloodcrushers, and all things nurgley.

You'll always outnumber daemons and like Frazzled said, make them take saves! I find that when against daemons it's all about volume. Power weapons (or for us the equivalent: MC hits in CC, Broodlord, etc.) and anything else that ignores armour does nothing, so focus on getting volume. Stealers are fantastic but you have to give them cover and protect them as they will be extremely high priority for a daemon player. We'll always strike first, so getting into CC should be a priority for their footsloggers. Again though, avoid their elite CC units as they will always do better against our standard troops... Rending won't help you against an invulnerable so make it about #'s and quickness.

His list had 2 plague bearers, 2 blood letters, 2 horror squads, a slaassnesh greater daemon, and a daemon prince if i recall.

I did this from memory i couldn't find my codex so i didn't know what greater daemon he was using. It allowed him to re roll failed invulnerable armor saves.

I now have a flyrant (no idea how its spelled) and it helped so much it was a little creepy. It flew in and killed the flamers and horrors.

I also use a ripper swarm in a different game and it held up a plague bearers squad in place for most of the game.

I used warriors with leaping and I'm not so sure about them in cc are they better winged ranged or cc.?

I'm serious, rippers are the greatest against chaos daemons. Like you said, they can hold up units for the entire game. And a word of advice, warriors are ok in CC but if you kit them out for that rending does nothing as all daemons have an invulnerable. So if you had 2 pairs of scything talons and a strength upgrade they'd be hitting on 3's and wounding on 2's with 4 attacks. Ranged weapons are great, especially twin linked devourers. Make daemons take saves and I guarantee they'll fail. Just don't get in with bloodletters or the like with CC warriors. Being fearless will kill you quick.
