One example is some people paint on sprue , then glue them together etc etc.

When i use zap a gap or super glue , and it touches paint , it dissolves the paint.
And then it turns the glue into a slippery goo thats not sticky anymore.

Surely this cant only happen to me? How do you guys deal with this goo?

Don't paint on the sprue or use a different glue.

I use poly cement on plastics and two part epoxies on metals and resin. Superglue is used only for a temporary bond or repair.
The solvent in it (liquid poly) not only dissolves plastic (and welds parts together as it is intended to), but it also handily removes paint underneath it from metal, plastic AND resin. Doesn't harm the metal or resin, either (won't bond any of them - barring freak occurrences - either)*

Other than that, I try not to put paint on the surfaces to be glued.

*It is possible to use this stuff to bond plastic to metal, given the right circumstances. I managed to glue a plastic sarcophagus plate to a metal dread. The glue softened the plastic enough, and the metal part behind it had grooves a suitable shape for the suction to hold it down while the glue cured. I doubt I could do it again if I tried, though.

I've been using the GW superglue to glue parts that have been painted together. I haven't had any problem with the paint coming off or anything else like that. Seems to hold better than trying to superglue plastic to metal. It might just be the glue that you are using. I'm also using the GW paints right now. Don't know if you are using a different type of paint or anything.

Scrape off the paint before you glue them together.
