I have some plastic chaos and ordinary space marines I want to convert but they're all glued together, making it impossible to change their positions/heads without destroying them. Is there any way to remove games workshop brand plastic glue from assembled models?

Chew it off....

If there is a lot of glue, I haven't found anything that will effectively remove it without needing greenstuff.

Simple green might work well, it cleans up the model pretty well (if you aren't concerned about paint being removed)

Please note - terms like 'always/never' are carried with the basic understanding that there are exceptions to the rule, and therefore are used to mean generally...

As you said the models are glued together with GW plastic glue. Best thing you can do is to use a knife to cut through the places were the parts are bonded. The glue itself melts the plastic it comes into touch with and after dryign the plastic parts are fused / welded together and there is no way to undo this.
