Does anyone know any good (or at least functional) lists for Mercenaries using only the models available from Prime and Escalation?

Hmm.
First, I think we need to look at what contracts you can use.
4 Star Syndicate - You can use everything available. Certainly a contender.
Highborn Covenant - You can't use Magnus, his jacks, the Nomad, the Talon, or Boomhowler & Co., but you get an Advanced Deploying Eiryss or Gorman. Not bad, I suppose.
Magnus' Agenda - You get Magnus, his jacks, the generic jacks, Boomhowler, Gorman, and either Trenchers or Longgunners. That could be worth it.
Searforge Contract - Gorten, Rhulic jacks, and Herne and Jonne are all you get, and for no benefit because you don't have High Shields or Bokurs. This is a bad choice.
Talion Charter - This one is right out.
Gorten can do all right in Highborn. Just be sure to bring Herne and Jonne to thin down the enemy infantry. Between the Driller, Gunners, Gorman's Rust, and Devil Dogs, he should be able to handle any heavy threats that come his way. Rupert is a must. And not taking Boomhowler to AD Eiryss is probably the way to go. I'd definitely do Highborn over 4 Star.
Magnus' contract choice depends on the supporting cast you want to give him. Devil Dogs, Reinholdt, Eiryss, Rupert, and Herne and Jonne vs. Trenchers or Longgunners. It's a toss up, but if you're going pure Merc, the choice defaults to 4 Star.
I probably went overboard on the solos, but try this:

There’s lots for me to think over there thanks. Having listed all the options (below) it occurred to me that some lists almost write themselves especially Searforge lists that will be near enough Mangled Metal whatever points you play.

Who's this Magnus the Traitor fellow you've got in your Magnus's agenda list? Is he any relation to the popular warcaster:

All in all, fact is that Warhammer 40K has never been as balanced as it is now, and codex releases have never been as interesting as they are now (new units and vehicles and tons of new special rules/strategies each release -- not just the same old crap with a few changes in statlines and points costs).

Thanks, fixed it now I forgot about Sam's Jack Marshal ability.
[edit] It occurs to me that the two 'proper' units availabe to these lists (Sam & the Devil Dogs and Boomhowler & co.) are some of the least well regarded units in the game. It'll be interesting to see how these lists play in Mk II.
