They do get a consolidation move. The listing under Monstrous creatures only lists what works different than normal for that type of unit. If nothing is listed then it works the same way as normal infantry.

In your example, a Carnifex will get a consolidation move after smashing an unit to bitz.

They do not. Therefore your carnifex does get a consolidation because Monstrous Creatures Follow the rules for infantry except where otherwise stated. They also get to sweeping advance.
