This is pretty straight forward.
I don't want to hit the front armor! I would much rather hit the side armor with a 4+ cover save. That's allowed right? I'm in the side armor quadrant, I just can't see any part of the side armor at all.

Actually the extreme angle rule calls out for a 3+ cover save.
|

and not finished until I own some of every army

If you are in the side armour facing but can't see the side you can't shoot at the side armour. Your picture is crap but if I understand it (and you) correctly you have to hit the front armour and give away a 3+ cover save.

In one game turn an Imperial guardsman can move 6", kill a few guys with his flamer, assault 6", kill two more guys with his bayonet, flee 12", regroup when assaulted, react 6", kill one more guy with his bayonet and then flee another 12".
So in one game turn an Imperial guardsman can move 42" and kill more than 5 people. At the same time a Chimera at top speed on a road can move 18"... |

If I understand you correctly, then the answer is No.
You might be in the side armour arch but you cannot see it. You can see the front armour though. Your shoots are then shot at the front armour with a 3+ coversave.

Even odder is the reverse case, where you can see the side armor but not the front, in which case you'll shoot at the side armor and give a 3+ cover save.
It's odd because a Predator obscured like this could be destroyed by an autocannon much easier than if it were not behind any wall in the first place.
