If my pathfinders are outflanking and the devilfish is not, do I still role for their reserves with the one dice for both of them, or one dice each?

you only roll a single dice if they are arriving in the devilfish, in any other situation, even if both are outflanking but they aren't arriving inside it, you roll seperately as they are two seperate units.

Interceptor Drones can disembark at any point during the Sun Shark's move (even though models cannot normally disembark from Zooming Flyers).

Drunkspleen has it right. If they are embarked and move on embarked you roll one dice, otherwise you roll for them separately. Don't forget you must state before the game what the deal is and cannot change that mid game.
