For gray-weathered wood, use a light wash of Badab Black.
For weathered but kinda still natural, a light sepia wash followed by a light badab black.
For natural, use sepia.
For cherrywood, sepia and a light baal or a ogryn flesh wash.
EDIT: these are the techniques I use on craft sticks or balsa wood, I should add. For a different material, I would paint it gray and use a wash of light sepia like you suggested.

Yeah, I have some craft sticks fashioned into makeshift fences.
They're already primed black, however.

Bummer.
For natural wood, it would probably be ok to paint it a light brown/tan color and use a black wash to grey it down a little. I might have to explore this and it might make a good article someday. Thanks for the thought provoking topic, malfred!

I'll keep it in mind when I do another set.
So you just wash the material straight away? Nice! That'll make the next project much faster.

Well, to be honest I wait for the first coat of paint to dry, but yeah.
