I think I can help you out. When I first started playing tyranids I hated my genestealers. However since I've learned how they work I use them a lot more.

I usually run them plain with feeder tendrils. If they are with a Broodlord and you want a unit that's really nasty on the charge take tendrils on the brood lord and acid maw on the genies. It depends on how many points you feel comfortable with sinking into them. They do very poorly out of cover and get shot to death as easily as gaunts do. It's best to keep them in hth as much as possible.

The variants I use are:

Base + Tendrils (used as a cheap retinue or 6-man squad to sit on objectives)
Base + ScyTals + Tendrils
Base + Acid Maw + Hooks (when used as a BL retinue AND the BL has tendrils)
Base + Scuttlers + Hooks (to outflank)
Base + Acid Maw + Scy Tals (when used as a BL retinue)

Just think of what you want them to do. Make them good at a single situation because tooling them out to be good at multiple things gets pricey. The base one with only tendrils I use in small suqads to hold objectives with, talons and tendrils are used to assault with, acid maw and hooks work well if they're with a broodlord who has tendrils+hooks, Scuttlers and hooks is used to outflank and assault heavy weapons teams and like units which usually have a power weapon seargent and sit in cover, and the acid maw+scy tal genies are great with a broodlord at the downside of being costly.

Extended carapace: You genestealers should be in hth where this upgrade is very helpful. However there's a nice bunch of AP4 guns out there wanting to make your upgrade a total points waste. So you have to kinda of weigh in how much fire vs hth wounds they'll be taking. If you keep em with their original save they die like gaunts, but with an upgraded it's good in hth but heavy bolters flatten them.

I personally never use the +S or implant attack because they just never seem to really pay off. The +S largely isn't needed due to having rerolled and hits and possibly wounds too, plus a high number of attacks especially with Acid Maw + Scy Tal stealers and a tendril equipped broodlord. That unit will liquify pretty much anything on the charge.

Outflanking: A BL with retinue can outflank already because of the broodlord's infiltrate so don't make the early mistake I did by taking scuttlers on those genestealers. You run the risk of not getting the side you want 1/3 of the time, which arguably isn't too bad. It can be devastating with big squads so I tend to outflank only if I feel lucky or have a small 6-man squad who doesn't impact me much if it ends on the wrong side. Your mileage may very and your opponent may have tasty targets on either side, if so outflank away.

Infiltration: with the new TLOS rules shooting through cover is very possible now so you can't hide out of LoS behind a piece of area terrain as easily. I'd advise against this unless you see a blatantly obvious window of attack. Again, your mileage may vary.
