Just get the point n shoot that you like most.* Preferrably one that can shoot in
RAW format (easier to adjust white balance) and with aperture priority mode. Get a cheap tripod as well so you can use a large aperture-value (which usually means longer shutter-times). I bought my younger sister a GorillaPod which she kinda likes. It's easy to setup and not as bulky as a full-size tripod.
Large aperture-value = longer depth of field (DOF)
Small aperture-value = short DOF

What you usually want to avoid is pictures of a small object (in this case a mini) looking like this:

P&S cameras that have gotten good reviews lately:
Canon SD880IS &
Canon A590 IS &
Canon G10 You might wanna look for the older, but still very capable G9 online for a good savings.
*Why? Because most of the current generation P&S in the same price-range are almost equally the same in terms of picture quality etc. What differs is controls and added features. (Canon G10, Panasonic LX-3 etc.)
