So I have started to entertain the notion of getting into Warhammer Historicals and the Warhammer Historicals Legends of the Old West. I was curious what companies people liked for historical models, specifically looking for Vikings and cowboys. Thanks!

For Legends of the Old West your posse won't ever be that big - 15-20 at most. I suggest getting nice figures, not cheap figures. I prefer the look of Artizan and Black Scorpion for cowboys. If you want a cavalry force, get the new Perry plastics.
