Dark Eldar grotesques have their own version of feel no pain rule which renders them immune to any shooting attack that does not double their toughness value. So I assume that this also makes them immune to things that have a weapon strength value of x like sniper rifles and wraithcannons. Although I'd still say a roll of a 6 to wound on a wraith cannon would kill them them since it inflicts instant death regardless of toughness value.
Is this in fact the correct interpretation?

Mostly.
For RAW wraithcannons do not kill them on 6s.
But RAI I would think they do.

Hmm... how do they interact with Apoc and D weapons? ;-)
I'm pretty sure any special attack can still hurt them. They can ignore hits of a particular S value or lower and that's it. If the hit inflicts wounds regardless (snipers, Gauss) then they would have to take it. Same for hits that just remove them like the SAG, or ID like Wraithcannon.
My 2 cents say the codex is badly outdated.

It's actually the other way around, not that they ignore S5 or below, but rather "they ignore shooting hits from weapons whose Strength is not at least twice the Grotesque's Toughness (ie. they are only affected by shooting weapons with a strength of 6+)"
Strength X weapons satisfy neither of these categories. In practice, I personally play that S X weapons can kill them if they cause ID, otherwhise any wounds from them are ignored, but I don't believe RAW is even that forgiving.

Interceptor Drones can disembark at any point during the Sun Shark's move (even though models cannot normally disembark from Zooming Flyers).

Well, it depends. Strength D says it wounds automatically and caused ID, which would imply that it always counts as double the toughness of the target, but that's not good enough for the RaW.
TBH though, you are playing Apoc. if you really get pissy about this kind of thing, then you shouldn't play Apoc.
And for the official record, I would try to have it played as Strength D being able to hurt them They might be able to shrug off Bolters, but anti Titan weaponry can obliterate them easily.
