I think this will give people a brief over view of tactics of different armies; I am going to post just basically a outline. Basically this is a post your kryptonite for your army. Ill go first.
Vs. My Space Marines
1. Ork - Just a overall difficult army to play against; I don't fear Nob Bikerz as I have good counters what I cannot stand and hate playing against is multiple vehicle spam with Mech Boyz and KFF, Just difficult over all as there are few things that can get rid of that obscurity that I have access to period. Sure I can kill the Mek , but its difficult and costly usually. I also do not like playing against Deffkopters; fast , outflanking , Powerclaws. Ugh. Burna Boyz as well it doesnt matter that I have 3+ army if I get hit with 10 templates and have to make 40 saves.
2. Chaos; Oblit Lash Spam - Not that big of a deal against a MEQ mechanized with Sternguard and outflanking scouts. What I hate is dealing with Rhino Spam Melta Squads. Straight up in combat vs. a normal Havoc Squad w/ Mark of Khorne they can deliver the attacks and their MEQS. Just overall difficult. Do not fear Oblits as I have melta heavy and Nullzone.
I fear and hate possessed, as well as Chaos Vets as well. Having a Squad of Vets outflank with Powerweapons and Lighting Claws ruins my day.
3. Marines - Space Marines in general are never fun to go against and its usually a semi heated battle that usually goes to he who feths up gets it. I hate Vulcan Spam and Terms with Lightning claws ruin my day.
4. Black Templars - Same as above , Assault MEQ, Just in general the army is difficult and a very tough army to play against. Even more so because of Preferred enemy.
5. Blood Angels - Same as above I hate playing assault MEQ, these guys have plenty of power weapons, meltas. Not fun to play against.
6. Dark Eldar - Getting bogged down in combat by a bunch of Wyches sucks , Dark Lances eat my vehicles alive. I actually really get annoyed with Reaper Jetbikes. Also, the ability to tank shock multiple units with -. Again pinning the army has a lot of pinning options I hate pinning. I can deal with break test i have a great counter for that. Pinning sucks.
7. Imperial Guard- So man templates; first order of business is getting rid of them. I hate outranging Vendetta , its just difficult to deal with TwinLinked laz scooting around at the 48 inch range and MArbo I hate Marbo. Psyker battle squads are kind of meh. The thing I hate the most is the Medusa and Manticore their usually the first things I go for any vehicle that is going to start pinning me ignore cover and kill me with AP3 , dies as quick as possible.
I actually hate playing againt Penal Legionairres.
8. Eldar- Not really played them much don't find them that enthusiastic other than the whole Seer Council which is easy to ignore somewhat or bog down. The unit i hate actually the most is Warp Spiders. 3+ then 2+ to wound me yes, thank you. Oh and you can jump out of LOS, and Assault range. Oh and it eats my transports up. War Walker Squadrons with guide and fortune are also something I hate. The only really assault unit I do not like going against is a Shining Spear Squadron led by a Autarch w/ reaper launcher. Yes, why thank you 20 power weapon hits that wound on 2+.
9 Tau - Not at all eat their lunch with meltas and h. flamers. I find multiple pinning from them more annoying and frustratin than anything. Break Tests are find but multiple pinning just annoys me as I cannot counter it. Thats pretty much it , I find multiple drone squads forcing pinning checks more difficult and Marker Light Spam. I dont find disruption fields that hard to deal with as I mostly play mobile and Drop. SMS don't really affect me much. I actually hate Broadsides deep striking. Shasho whatever mass Crisis suit with multple layouts to take care of wounds is incredibly annoying.
10 Tyranids - Same Not impressed with them since Sternguard can just rape the dog crap out of the MCs. I am generally not impressed with Tyranids at all, although First Turn Mass Hormagaunts can be incredibly difficult at times to deal with. Biggest thing I hate is when they tie me up and the Monstrous creatures come in. I hate Dakkafexes most of all and hate having to dedicate time to them. The armies i do not like playing against are ones that have large amounts of Tyrant Guard good saves and brutal to fight against in CC.
11. Dark Angels, I find them over all meh. They are really expensive and i am just not impressed with a Deathwing army period.
12. Chaos Daemons - Nullzone eats their lunch with Sternguard. Just overall never been impressed with them not even blood crushers honestly. The Daemons I hate dealing with most isnt bloodletters but Plaguebearers and Slaanesh Daemonettes and chariots, so many attacks before I ever get to go.
I am sure I left out some armies but that is my list of armies and what I hate about them the most.

I'll post for my Night Lords CSM, as you've covered Spess Mureens pretty well.
1) Well played mechdar. They keep my assault heavy army at arm's length and shoot me up. I hate Dark Reapers more than Hollismason hates Warp Spiders.
2) Guard can be annoying. I just don't generally pack enough anti-horde to get through their numbers.
3) Ork speed freaks are very difficult to deal with, especially multiple battlewagons and drive by Burna boy attacks. My anti-tank is too close range oriented to prevent them from reaching my lines.
Armies I find easy:
1) Tau. My army is fast and hits hard in assault. One or two deep strikers and they have all they can deal with while the rest of my troops get close. Never lost to Tau.
2) Non Speed Freak Orks. I find that they rely too much on getting to me. I manage to clean them up with a Defiler and a sacrificial but effective berzerker charge. Once they reach me, I hurt them enough in CC to finish them off.
3) Spess Mureens. I may not run Lash/Oblit spam but my army is fast, good in assault, and packs lots of meltas, not to mention a Battle Cannon. My Chaos Lord with a jump pack and 5 LC attacks on the charge puts away quite a few Marines. Same with Berzerkers in a Chaos LR. Really puts on the hurt.

Deepstriking and fast melta's are bad news though.

Wow crons dont appear on the list?
fine as crons i dont have many problems at all in big games
now most of you will say Loken tanks royally destroy crons
i say your right so do soemthing about it and take a monolith or 2
or agaisnt imperial armours take wraiths who can be nifty little tank busters
over all i have not yet palyed a army as crons that cuased my paints exept nids and orks who over ran me before i could do my thing

I dont rank necrons as they are not what I consider a threatening army against my Marine. That is to say against my marines I have never had a problem with Necrons, Sternguard and Redeemers tend to eat them alive. Monolith Builds dont work well against because I just kill the Warriors and Immortals and force phase out. Deceiver and Nightbringer are easily dealt with by sternguard and with Nullzone. Scarab swarms dont frighten me because I have heavy flamers and a Redeemer.
Assault Troops tear them a new one. i usually run a squad of TH and SS in a Redeemer.

Necrons only have a few viable builds and all of these builds have very obvious weaknesses. Tanks dominate Necrons, glancing hits now do jack all against vehicles and Necrons possess very little in the way of dedicated anti tank, heavy destroyers and Monoliths can only fire one medium ranged strength 9 shot a turn and this simply isn't enough to reliably destroy tanks. Take 2 monoliths you reckon Loken? Thats almost 500 points for 2 shots that each have roughly a 2/3 chance of HITTING the target, even with AP 1 this is hardly a reliable shot. With most 5th ed lists being packed to the teeth with vehicles Necrons have being left behind.

I play mech tau:
3 hard armies:
Deamons:
Being forced to either hid in reserve, or come on and pray that they can't kill an important vehicle with bolts of change early on? oh, that's just great! Flamers aren't very nice either, and plague bearers are a serious problem even in the best of times.
Mech eldar:
Railguns are neutered. melta is worthless. and deathrain is nice but can't remove wave serpents fast enough. good luck removing those fire dragons before they murderize you. the only time it gets worse when farseers (or worse, eldrad) get thrown in the mix.
Necrons:
this should, be, by all rights, the easy matchup. but it's often not, since I have nothing to assault them to death with, and a monolith will just screw up any plans you have to avoid having a contesting unit on your objective. and shooting them to death? not fething likely.
Easy matchups:
Chaos:
This varies from build to build, but honestly, I play this build a lot and know a lot of the ins and outs, and being mechanized makes lash spam mildly useless. the biggest issue tends to be deep-stikeing oblits (or termies, for that matter); but a lot of people don't do this, and you can simply out shoot them. berzerkers can be whittled down by moving skimmers over 6'' and using simple attrition; characters can being avoided. this leaves plague marines as a annoyance, which they are, nothing can really solve that problem. but still, it's a manageable matchup.
Nidzilla:
Once you learn the ground rules (stay out of terrain; stay away from flanks) the matchup goes from "tricky" to "easy", if he's heavy on MC's, kill his troops, and if vice versa, try to wipe his synpase out with railguns. deathrain really comes into it's own here. lictors are supposed to be dangerous to tau, but I've seen them used 3 times and every single time they got in assault with some battle suits and got punched to death the same turn.
virtually any assaulty army:
moving 12'' and firing anyways. flechettes. submunitions. Once tabled a blood angel player this way by turn 3. mech tau fears meltaguns... assault and long range anti-tank less so.

This is a very good topic idea o owl of the nite.
Ranking with my Dark Eldar;
Easiest to kill
(Chaos) Space Marines (I find few differences that matter. Pin, Lance, rinse, repeat, done)
Mech Anything (Lances love the new mech meta game)
Tyranids - Nidzilla doesn't like lances and the swarms don't like disentegrators or rapid firing gunboats.
Necrons - An array of fast vehicles vs. a slow race that lacks anti-vehicle? Yes please.
Difficult
Daemons - pretty much it becomes a bit of a game of 'keep away' as I have to use my Raiders to keep my troops well distant, and the constant invulnerable saves help protect his MCs from easy Lance death. Not to mention the Bloodcrushers...ugh, thankfully I can usually focus my whole army's fire on any given unit, but those giant bases help lock up the map something fierce.
Tau - their ability to have even rank and file units pop Raiders is pretty obnoxious. Sure I can get into close combat and chop them up, but even for DE running down Crisis suits isn't the easiest chore. Tau always give me a good run for the money in KP missions due to their Raider popping capabilities.
Green Tide Orks - they're difficult to flank since they always literally fill their side of the board and with Bikers and PK Nobs it can be hard to gunboat them without losing a Raider. Wyches have to become speedbumps and if they manage to pop my Ravagers early I'm in for a looong match.

I play Chaos (Mainly Khorne and Tzeentch) Mostly Zerkers and KSons no real Mech.
Easy - Probably 'Crons and other MEQ's. I am a BIG fan of KSons ( AP 3) and Zerkers just axe everything in CC.
Medium - Eldar - Whenever I've played they've never had much to get through a 3+ and Zerkers can waltz on through and kill everything. Also IG with same kinda issues (though havent played much against 5th Ed guard)
Hard - Tau - Kinda the opposite, last time I played Zerkers got axed in 500pts only like 5 guys got to CC and then i lost a Zerker to Fire Warriors.......They still tease me....
Also Deathwing. My friend plays it and most of my stuff is useless against Twin Lightning Claws with rerolls to hit and wound.....  again.
