Just a quick rules query here. I don't play Daemonhunters, nor do I know their codex particularly well.

By my understanding the GK 'Aegis Armour' ability grants them a Psychic Hood-like defense against psychic powers that are directed against them. Now, supposing that my opponent also has one of those unlimited-range DH psychic hoods on an Inquisitor someplace, does he get multiple (well, two) attempts to negate, for example, the 'Doom' psychic power? Similarly, will two psychic hoods allow two chances to negate?

I can't think of any reason why not, but I'd like to hear what others have to say...

I believe he gets only one try at defeating a psychic power, so either Aegis or Hood. However, Unguents of Warding is a save and can be taken in addition to any failed Aegis or Hood attempt.

Yep, DH 'dex pg 8 says that you may use either the Aegis or a Psychic hood but not both.

Aegis or 'hood, not both. The DH/WH codexes are not that particular about how many psychic hoods you may use, however.

It's not spelled out, but it is implied, since you can only declare to use a psychic hood after he has "successfully made a psychic test" and if you fail, he may then "use the power normally"

Heh heh heh... thought so. Well, that might have just made a difference in the game I lost by a single killpoint before making this thread. At least now I know where in the codex to point my opponent.
