Quick question - if I rapid fire a plasma gun and roll say a 5 and a 1, I obviously need to take a gets hot armour save for the 1, but do I get the other shot off?

This is correct. The one that hits still hits, and you resolve the wound etc after you resolve Gets Hot!

Or to re-word it (and only adding a little!), all to-hit rolls are made, then all to-wound, then saves if applicable.
Gets Hot! still follows that order.
