Asurmen Blue/Leviathan Purple washes are your friends.
Basically:
You want to use the standard fleshtones, but the highlights and shading will be done using blue/grey tinges. With a smidge of green/browns for more advanced decay.

I use rotting flesh and a devlan mud wash.
More for necrotic/gangrenous flesh than zombie, though.
It's how my servitors have their flesh. They're done up as clockwork borg.

I'm OVER 50 (and so far over everyone's BS, too).
Old enough to know better, young enough to not give a ****.
That is not dead which can eternal lie ...

There is a tutorial in White Dwarf 356(i think) on how to do undead skin. It uses a purple colour but you can interchange for greens and blue as you need. It turns up quite nice too.
Also another one i did was with levithian purple. I mixed tallarn flesh and chaos black (it turns a darker grey flesh colour) then washed with levithian purple and highlighted up to tallarn flesh, turns out pretty good too.
