Ye gods! You chaps have fine memories indeed to pull those names out of your heads. Unless you were just quoting off the cheap T-shirts you bought at festivals
I have spent a few years working as a caterer for touring bands and can list the following:
The Charlatans
Muse (World tour baby!)
Cake
Razorlight (nice guys, awful music)
Suicidal Tendecies
Bad Religion (bit of a dream that one)
R.E.M (only did the european dates, but they were one of my favourite bands when i was small)
Little Boots (annoying blonde singer)
Pixies (One date in Manchester: I will never get over sharing a cigar with Frank Black)
Elbow (The biggest bunch of pissheads i have ever met)
Other than that....
Mansun x many
Radiiohead x many
The Violent Femmes
U2
Blondie (4 the lulz)
The Damned (Minus the captain :( )
Innumerable bands from when i ran a club in Manchester who were mostly rubbish with the odd bright exceptions.

Lots! I dare say I couldn't remember them all even though it wasn't as much as some of the others posted.
I will say the best live band I remember seeing (and I was NOT a fan when I saw them, I was dragged by a friend with an extra ticket) was...
Oingo Boingo in '94
The energy and live showmanship of Danny and the boys was amazing!
Also I have had more fun at several local, little punk shows than I have had at bigger concerts.

Not too hard. Queen didn't do that many tours here with Freddy. The man was a showman. No-one else comes close.
I've also got Danny Elfman to autograph an Oingo boingo LP (Dead man's party) when he was out here doing promo work for Batman.
His reaction was priceless. All the other fanboys had the Batman OST.
"Where did you find this?" followed by "How much do you want for it?" (I should also note this is years before ebay).

I can't even count the number of bands I missed due to not being able to afford to take time off work, problems with my debit card, or being days away from a paycheck and not being able to secure tickets. Missed something like 24 bands I wanted to see.

Before I read this thread I thought I had seen a lot of bands. I pretty much stopped going to shows after High School, so that explains why I am lagging so far behind!
I have seen:
AC/DC (Flick of the Switch and Who Made Who)
Judas Priest (Defenders of the Faith and Turbo Lover)
Bon Jovi (1st Tour and Slippery When Wet)
Monsters of Rock (Dokken, Scorion, Metallica, Van Halen etc)
Ratt (4 times)
Poison (4 times)
Twisted Sister (3 times)
Dokken (A lot - headlining and backing up)
Fastway
Faster Pussycat
Iron maiden (Powerslave, Somewhere in Time)
Motley Crue (Girls Girls Girls, Dr FeelGood)
Great White
Tesla (Twice)
Cinderella (Night Songs and Long Cold Winter)
Debbie Gibson
Kenny Chesney w/Brooks and Dunn and the young Blonde Chick
Aerosmith twice
David Lee Roth (Eat Em and Smile and Skyscraper)
I took my wife to see Debbie Gibson, but she went with me to a couple Ratt/Poison shows.
I got to meet AC/DC, Iron maiden and Poison and they were all cool guy.
David lee Roth was by FAR the best (both times). That man could put on a show!
I know I am leaving a few out, but that is most of them.

Off the top of my head, and this includes some opening bands and local bands too, some of which are great and some of which I don't particularly care for. This should be roughly in order too.
Weird Al
Darwin's Waiting Room
Puddle of Mudd
Deftones (x2)
Godsmack
Soil
Soulfly (x2)
Static-X
E-Town Concrete
Sworn Enemy
A Perfect Circle
Chimaera
Fear Factory
Slipknot (x2)
Primus (x2)
Les Claypool (x2)
Dead Will Rise
U.S. Army Jazz Ambassadors
Chris Cornell
Limp Bizkit
Staind
Korn
Papa Roach (I could only stand to watch like one song though)
Juliette Lewis
Marilyn Manson
Killswitch Engage
Sevendust
Flogging Molly (x2)
The Prodigy
Willie Nelson
There's probably more that I can't remember off the top of my head though, and more local bands that I can't remember.
