A platoon, even with all 5 squads is this only one troops choice therefore requiring another?

Yes. An infantry Platoon is one FOC choice.

Yep, it's only a single Troop choice. One that can have roughly 137 (it can have more that that ) models in it.

Well then congratulations, you have satisfied the troops part of your FOC (platoon counts as 1 choice, and vet squad counts as 1 choice). Please note, however, that you still need to select an HQ unit to completely satify your FOC obligations, as the Platoon Command Squad counts as part of the Infantry Platoon and does not satify the 1 HQ minimum for the FOC.
