Just picked up a citadel spray gun, but I notice on the instruction cards it refers to using foundation paints with it... will the non-foundation paints work too, and if so how much should I dilute them?
Yes they will.
Dilute 50/50 will car windsreen fluid (the pre-mixed stuff). It doesn't matter what colour it is as this won't effect the paint colour.
