If a farseer or anything that can use a Psy. power is in a troop transport like a wave serp. then can the farseer use guide on the ship while inside it?

Assuming you have a farseer in a transport heres how it works
Guide/Doom/Fortune-Can cast on the guys he is riding with. Can also be cast on the tank or any squad/vehicle outside the tank but still in range.
CANNOT be cast on guys inside other tanks.

Eldritch storm/mind war-Follow normal shooting rules, except mind war targets a specific model

Really they can cast them on squads outside the tank? Because my friend told me I couldn't do that because there are no firing points which is stopping the line of site.

Yes it can, it can also use it on itself and the unit inside the transport with it if it wishes, the only thing it can't do is use it on a unit in another transport.

Interceptor Drones can disembark at any point during the Sun Shark's move (even though models cannot normally disembark from Zooming Flyers).

Guide, doom and fortune do not require LOS and are not shooting attacks, so you can cast from inside a vehicle, of through a solid wall.

Eldritch storm and mind war (although not needing LOS due to being an Eldar power) are phychic shooting attacks so need a firing point if you are inside a vehicle (but you can otherwise cast it at units you cannot see, such as ones hiding behind terrain who assume themselves safe)

Mind War does require LOS, per it's own rules, but since it is also a shooting attack it can't be fired from within a falcon or wave serpent, as there are no fire points.
