If I have a bike with a driver and then a gunner on it, like a SM assault bike or an Eldar Vyper jetbike, if the unit takes one wound, can I decide which person to allocate that wound to? Could I kill the driver and just have the bike immobilized but the gunner still firing his heavy weapon? Or do I have to kill the gunner and let the driver keep on driving the now-useless (without its heavy weapon) bike?

An attack bike is a 2 wound model and therefore no model is removed from it until both wounds are gone at which time the whole model is removed from play.

Neither of the units you mentioned work like that.

An attack bike is a single model with two wounds.
A Vyper is a vehicle.

In neither case do you hit the crew individually.

I believe the confusion is arising from p53 of the BRB which says a bike may fire one weapon for each rider on the bike (which might confusingly imply that the 2 wounds on an attack bike represents the 2 riders, and thus losing a wound constitutes losing a rider)

I presume that it does not work like that, as Ramses and insaniak have already pointed out.
