What you want is matte varnish.

Gloss will make them shiny and often detracts from paint jobs.

Testors Dullcote is a popular choice as a finish on painted models, although I know Krylon makes a clear coat matte varnish that is more bang for your buck. I'm not 100% on which one it is though.

You can use purity seal, but it's a REALLY overpriced substandard product. Most craft shops will have Krylon matte varnish or Testor's Dullcote.

Best way to do it. Is to use some High Gloss. Two coats, and then top that with a single coat of Dull.

Why?

The high gloss is generally a superior and 'harder' finish. But the gloss as mentioned detracts from the shine. a shot of dullcoat over the top will get rid of the shine.

Plus, when your model becomes shiny, you know the dullcoat has worn off, and it's time for a respray!
