Assuming you are gap filling and not actually sculpting details, 2-3 hours should be fine. If you are sculpting details, I'd leave the GS about 8 hours before painting, if I'm in a rush, or upto a day if not.
Also, GS does cure completely (as long as it has been mixed fully). It can retain a certain amount of elasticity dependent on the mix (more yellow in the mix will make it more flexible, more blue will make it stiffer), but it will completely cure off in around 24 hours.
