Why would the Necrons fight the Tyranids? Sure, the 'nids are alive but they're doing what the Necrons want, namely killing everything in sight. Tyranids can't really eat Necrons and turn them into useful bio stuff so there's no reason to engage them except if they're fired upon by the Necrons.

So, if you're a Necron commander of some sort why would you want to destroy the Tyranid hive fleet heading your way? Wouldn't it be better for you to just "turtle" till they've passed and mop up?

If you're the hive mind, why go after Necrons? Living metal certainly doesn't sound nutritious and even if the Necrons are killing living beings the corpses remain fully digestable so it's not like the Necrons are taking away your food source.

Yeah,i dont think they would. I think the crons would give one guant food, then a whole tyranid hive fleet shows up to be der pets.

Dozens of Hive Ships separate from the main body of Hive Fleet Gorgon and descend upon the Tau colony of Ka'mais. Bitter fighting erupts as a fleet of Necron starships unexpectedly emerges from Ka'mais' dead moon. The outnumbered Tyranids are destroyed

The Necrons then kill the Tau colonists themselves. My question is, why bother? Why not just stay on the moon and let the 'nids do their thing?

Because the Necrons want to harvest the other races for themselves. Why let the bugs get everything when your gods are hungry too?

I think they wouldn't fight each otheer because, as you said, necrons only harvest life with souls, and tyranids only kill for food. So, it would be strange for both to spend resources in a conflict like that.

It would be impractical for either race to fight. Necrons would simply destroy the nids, whilst the nids recycled there bio matter and the necrons self repaired. The conflict would not end and neither would get what they wanted from it!

Necron weapons destroy biomass. Thus, nids will kill anything but daemons and crons.

Don't demons have "biomass" while they're in the real world? I expect that the 'Nids are attracted to the astronomican they way bugs like candles but wouldn't they be attracted to the Eye of Terror or Maelstrom in the same way?

Also, I was reading how the 'Nids use gravity to "warp" realspace and thus travel ftl. Easy enough to see this in a densly packed galaxy, but how do they do it through the vast void of intergalactic space?

Tyranids would never fight Necrons, it would be a war with the tyranids horrible loosing, tyranids want more bio mass, and any necron tomb world is devoid of this, and the primary weapon of the necrons is to eradicate something on the molecular scale. In the fluff Tyranids steer clear of any necron tomb world actually moving completely around worlds that are inhabited by the necrons.

As for Daemons once they are killed they are just returned to the warp, to actually try to harvest any biomass from Daemons is fruitless.
