i just got a tonne of simple green to strip paint from a tau army i got for free, now this guy layered 4 or 5 layers of paint, the models are fully submerged, how long do you think i should leave em

You'll be able to see when the paint starts lifting off. If in doubt, leave them a day or so and then try scrubbing one with a toothbrush. If the paint doesn't come away easily, drop him back in and give them a bit longer.
Don't worry about leaving them in there for too long. I had a squad of RT-era Space Marines floating in a jar of the stuff for about 3 months with no ill-effects.

i usually dumped whatever i wanted to strip in, then start another project. so, at least a couple of days. hell, i've left stuff in it for 4-5 weeks. and like insaniak said, the paint starts to fall off. what doesn't, i used an old toothbrush on. watch your eyes, and some people say SG irritates skin.

Leave them in for 3-4 days then give them a quick scrub with the toothbrush just enough to get the loosened top paint layers off and maybe expose some Metal/Plastic. Then leave them for another week they should be G2G after that.

just leave them in over night and they should be fine the next day. sometimes with m plastic models i have to leave them in a bit longer, just give them a scrub and dump em back in for a few more hours or another night if they are really thick. good thing is, like others said, no worry about the model being eaten away.

thanks guys, i ahd to leave them in for 3 days, scrub them off, then put them in a new batch for 2 days, but i got rid of all the paint
i counted 8 layers :(
