What happens if a squadron of vehicles wants to ram or tank shock a unit? I cannot find this anywhere in the BRB and was wondering if you just use one tank for it, or the whole lot, then if you use the whole lot would they be done at the same time or all separately?

I'd resolve each individually - but if you did it carefully, you could probably herd your victims, which I assume is what you're after.

Haven't tried it yet. I'm assuming you try to line up as many vehicles for hits as possible on the opposing unit. If its one squadron ramming another I would line up 1 vehicle to 1 vehicle, until the ramming unit runs out of members.

What if you did it so that the enemies couldn't get out of the way...

The rules don't cover it (at the time the rulebook was written, there was no way to get a squadron of Tanks in regular 40K games, so it wasn't an issue).

I think resolving them sequentially would be the easiest way to do it, although it would probably be more in keeping with the rules to move the entire squadron and resolve them all simultaneously.

This is not actually how it works. You can not kill enemy units with a Tank Shock, unless they perform a DoG attack. The unit is always just moved out of the way. If there is physically nowhere to move them to, you'll need a house rule to cover the situation... but it very, very rarely happens.
