Move or Fire is over F C...
some units like pistoliers ( FC) have ability to "hit-and-run" so that mean they can shoot and move (outhriders(alsow FC) must choose M or F because they do not have special ability M or F)

Pistoliers can move and fire because they have pistols, not because they have any special fast cav rule.
Fast cav have the ability to shoot even when marching, but this doesn't have any effect on Move or Fire weapons. So pistoliers can march and fire, outriders have to remain stationary to fire (but can do so with 360 degree line of sight, blocked by models as normal).

Yes. You can move and fire with any weapon that does not have the "move or fire" rule.

Quick side question: does the 360 los get blocked by other models of the same unit, or do outriders ignore the other outriders in their unit, like skirmishers. If so...they are a lot better than I thought.

Yes. Models block LoS to other models unless the other model is large or on a hill.

However, as there are an infinite number of lines that can be drawn from one unit, unless the unit you are firing at is *exactly* the same width as the 50mm outrider unit from the side, and is *exactly* in the shadow of the unit, you can either shoot with ALL models or just one.

No, not joking at all.
Each model has 360 LOS, blocked by the model in their unit. There is an infinite number of true 1D lines that can be drawn from each model, meaning ONLY when the models in their unit AND the model in the opposing unit *exactly* line up will any shots be blocked.
