think of a model as being a snapshot of the unit it represents, so it's not hovering 50 ft in the air all game (like when picking up/dropping off infantry for example).
Besides, assaulting represents not only hand to hand beatdowns, but all short-range combat; be they a point blank small arms fire, hurled grenades, or space marine slapfight. I personally like to imagine my powerfist guy climbs on the shoulders of his buddies and they build a human pyramid until he can smack the pilot upside the head.
