If a building is large enough to contain, for example, 30 termagants, but the 2" arc around the entryway cannot fit the entire unit prior to "embarking", can they go in? Is this why most very large buildings are portrayed as ruins instead?

No. If a unit cannot all move to within 2" of a access point, they cannot embark.

To clearify what Gwar! said, if the unit as a whole cannot make it to within 2" of the entryway by the end of their movement then they cannot enter.
Example: 30 termagants are outside of building A at the beggining of their turn. The one furthest from the entrance is 8" away, then the squad CAN enter the building. If even one unit is 9" away this will prevent the entire squad from going inside.

In previous editions, GW have ruled that if the squad is too large to fit within the 2" dis/embarkation zone, then they should just be placed as close as possible. I would suspect that's the way that most people would still play it, although there is no current clarification on this.
