I think I already know the answer to this, but if you attack a dreadnought armed with a missile launcher and a CCW with integrated... whatever, lets say meltagun - if you get a weapon destroyed result, and you pick which weapon is destroyed - is the integrated meltagun considered to be a single weapon, or is the CCW arm with the meltagun considered to be a single weapon? IE, does that missile launcher/CCW dreadnought count as having 2, or 3 weapons? I presume 3.

Clearly answered by the rulebook, p73 under "Dreadnought Close Combat Weapons".
Though this is in reference to Dreadnought Close Combat Weapons; it's not entirely clear by RAW what happens when you are using Blood Talons instead. It would make sense to just follow the same rule, though.

It is 3 , but can have all 3 removed by 2 weapon destroyed results.
If the firing player damages and chooses the DCCW as the destroyed weapon you lose the DCCW and any integrated weapons in the DCCW.
however if they are feeling particularly nice(or the dread is already immobile anyways, and they are adding insult); they could choose to destroy just the integrated weapon leaving the DCCW intact.

I thought Blood Talons follow the rules for Blood FIsts, which state that the integrated weapon is lost if the main "arm" is destroyed.

Thanks, page 73 was exactly what I was looking for. I was looking under the vehicle section to resolve, not the walker section.

In the 5th edition codex it SPECIFICALLY states under dreadnaught CC weapons that everyting on the chosen arm is destroyed, so yes, the PF and the other weapon on the arm are gone.
