Which is the best of the following to arm my assault sergeant with?
(Both include Storm Shield and Melta Bombs)
Power Fist
OR
Lightning Claw
OR
Thunder Hammer
Keep in mind that it is only going to be a 5-man squad atm.
I face Orks the most often.

Well Id just nix the PF right off the bat. The thunder hammer acts the same way, except it also stuns things. Its GREAT against vehicles. So really its a question of thunder hammer VS lightning claws
Again the thunder hammer will be much more effective against vehicles, but the LC is cheaper, and you go in initiative order. So against Orks that would be better as far as facing troops go.
So vehicles the TH is the best, but when facing just troops, go the LC

I would have to agree with the above. LC would be better against just killing infantry because its cheap and effective. You should only take the TH if those orks field lots of vehicle. It would even be nice against lots of bikers

The only thing is that they have a lot of nobs.
PFs and THs will insta-kill them, but LCs won't. Should I still go with the LC?

If your 5 man Assault squad attacks a mob of Nobs your squad will be dead in the first round combat. So you can either just use that squad to attack small squads of light infantry which a power weapon would be a better choice, you could take a Thunder Hammer or Power Fist and use the squad as an anti-tank squad, or max it out take two flamers and a powerfist or thunderhammer (depending on your point needs) and be a semi-effective assault unit.
Personally I wouldn't even bother with the Storm Shield you'd have a 9 man squad to hide in by the time you need the storm shield your squads to beatdown to combat effective anyways.
