Mostly because emielizabeth asked for an example, here's one:

HQ
Canoness w/Blessed Weapon, Book of St. Lucius, Frag Grenades
Celestian Retinue
-- 4 Celestians w/2x Flamers, Frag Grenades
-- Veteran w/Bolt Pistol, Eviscerator

Troops
Battle Sisters Squad
-- 9 Battle Sisters w/2x Flamers
-- Veteran w/BoSL, Combiflamer
Battle Sisters Squad
-- 9 Battle Sisters w/2x Flamers
-- Veteran w/BoSL, Combiflamer

It's nigh-impossible to do a mech sisters list at this points level.

I would try to throw in a melta gun somewhere. I mean your entire anti tank is an Eviscerator.

True, but we don't have many points to play with. I could lose the combiflamers to get flamer / meltagun in the three squads, but then I'd have points I'd need to spend with nowhere to really spend them.

How about it's nigh-impossible to have a balanced game of 40k at this level? Some armies with really cheap and effective Troops are great at 500. Other armies with expensive Troops that need more support, like SoB and Eldar, suck to high heaven.

You know what I would do at 500 points? Something really unbalanced and unfriendly. For instance:

Inquisitor Lord w/Divine Pronouncement + 3 Warriors w/plasma guns

2x5 ISTs w/plasma guns

3x Immolator

That's 472 points. At the 500 point level, you can do a lot of damage with 7 plasma guns and 3 TLHF's. It's really just my middle finger raised in the direction of 500 point games, saying "you want to play a stupid points level? Well here's my stupid army."

"That thou wouldst bring them only death,/ That thou shouldst spare none,/ That thou shouldst pardon none/ We beseech thee, destroy them."

Nah, eldar can get some meaner lists than most in 500.

Anyway, as others have said, some more anti-tank, prefered in the form of a melta, would be nice.

No thanks, I hate the fact that Inquisitors are in my third edition Codex: Sisters of BAttle, and prefer to act like they don't exist.

With so few squads you don't really need the BoSL, that frees up points for a meltagun or two. I would suggest:

Canoness w/Blessed Weapon, Bolt Pistol Book of St. Lucius, Cloak of St. Aspira, Frag Grenades
Celestian Retinue
-- 4 Celestians w/ Flamer, Heavy Flamer
-- Veteran w/Bolt Pistol, Eviscerator

Troops
Battle Sisters Squad
-- 9 Battle Sisters Flamer, Meltagun
-- Veteran
Battle Sisters Squad
-- 9 Battle Sisters Flamer, Meltagun
-- Veteran

Comes to 500 exactly.

Adds some low AP and high str weapons, keeps a lot of flamers. HQ squad good at assault, everyone can use the Cannoness' leadership as with such a low point total, you should be playing on a small board and everyone could be close to her.

You always need the BoSL. Not having the BoSL is like Orks without Mob Rule, Tyranids sithout Synapse, and Marines without spank.

How does it help in a three squad army? You will always be using the cannoness ld anyway

Because you aren't always going to be able to have all squads have a model within 6" of the Canoness.

Stubborn plus, actually. It effects both morale checks AND pinning checks, whereas stubborn only effects morale checks.
