I'd also say Morrowind. Just don't go punching guards after you first start off.
Also make sure to kill Fargoth, just when guards aren't watching unless you want to nuke the town or spend ages fighting guards.
If you get bored try using the spell glitches.
[effect you want] mag 100 for 1 sec on target
[secondary effect] mag 0 for 0 secs on target
If I remeber it correctly (been a while since I've done it) this makes the first effect perminate. Aim down at your feet when you use it. Use it to increase stats or even with summons as it makes them act as normal monsters but on your team. Lets you do stuff like summoning a Skeleton horde and attacking a town. Also having a character that literally breaks a weapon by hitting an enemy with it once, same with bows. Basically my character ended up punching most of the time, eventually becoming a Vampire who lived in a house made of pillows next to the river somewhere in Balmora; and then only because I wanted to see if it was possible to make a house out of pillows.
If you increase Speed don't go above 500 as it starts to glitch a bit, besides it will become harder to control. Over 500 you can do stuff like run through walls and stand outside the cell watching it, if it happens jump and then you fall until you re-enter the cell from where you originally entered it.
Very different to Oblivion as it relies on a percentage system to determine if you do anything. So if you do hit them it works it out by a percentage determined by your skills then that determines if they were actually hit. It also has no fast travel so if you're out in the wilderness and screwed, you're screwed unless you have something to warp you to safety.
It also has some spells that were removed in Oblivion like the ability to fly, slow fall and the ability to lock doors. As NPCs don't pick locks using a ranged spell to lock a door at level 1 is pretty handy at times.

Can you still jump ridiculously WTFing high? In Oblivion, I had my Jump skill levelled up higher than it had any earthly business being at, and with only a minor console tweak, I was jumping over the walls of the Imperial City. And then some.

I've been looking for a good RPG to play with the wife for ages now but I keep ending up back at either Baldurs Gate 1 or 2 (neither of which are proper coop) or Diablo 2 which is more hack n slash than RPG and I just can't face the story again having played through it god only knows how many times back in the day. I'm quietly waiting for Diablo 3 to come out or another decent coop RPG, I'm expecting a long wait though

If you like Diablo clones, give Dungeon siege (1-2) A shot, I loved those games just as much.

I played Gothic 1. It was crazy awesome. Wasn't much of a romantic subplot or anything aside from the faction quests and the main story though. Still, walking around 1-punching wild animals while wearing godly armour was hilarious fun

What would be better, NWN 1 or NWN 2? I'm hearing NWN 2 is extremely buggy even now, and its not as supported, while NWN1 is still supported and better in general, despite worse graphics.
My suggestion for you: Dragon Age! I'm thinking of getting it.

I honestly didn't like Dragon Age. I liked Diablo and NWN but not DA. Plus its really not a sandbox RPG.

I'll jump on the bandwagon and say Morrowind. Still one of my top 3 favorite games ever. Of all time.

Yes, at one point I was able to jump from one end of the game world to the other. This game doesn't have the invisible ceiling Oblivion has in places.
Towards the start of the game you will probably find a wizard who falls from the air. He has some scrolls that fortify acrobatics by 1000 iirc. Just long enough for you to jump insanely high then die from the fall unless you have slowfall.

Borderlands is sandbox-ish. Kind of a Diablo 2 crossed with Fallout 3 and a cartoon.
That might be the kind of thing you're looking for. Though I'm not the greatest of fans of it.

How about Fable you can be good or evil, Fable's game world is dotted with towns where recreational activities not related to combat can be undertaken. Many towns have houses for
sale, which the Hero can buy, furnish, or lease to tenants for gold. Heroes may woo and marry men or women in each town, and through sufficient courting engage in sexual intercourse
with them. Fable has an open-ended world too, but not as much as Oblivion's.
Theres also Darklands. It came out in 1992, so it's pretty old-school. Its setting is medieval Germany, with the freedom to go all over the map and do all kinds of different things, and good
replay value might interest you.

Actually, I was thinking about Fable a while ago, but I thought it was only for XBAWKS RAWR
If there's a PC version of it, I might try it. I watched my buddy playing some of Fable 2 on his 360 and it seemed to be a pretty decent game for the most part.

Fable 2 = more of a chore then a game.

Fable 1 is much better on PC, cos they actually finished the game...its still not great, but still.
I remember Darkstone! old school 3d dungeon crawler right? I seem to remember the only problem with it was that you didnt actually have a quest log, so you had to remember who you were supposed to give items to.
You could try Summoner, I loved that game despite its flaws, not exactly open world, but is a pretty massive game nonetheless, I believe it has coop, though not sure how it works.
IMO STALKER:SOC was brilliant, though it needed mods to fix things up (My personal choice was the Redux mod, turned the game into a survival challenge) Wasn't a fan of Clear Sky even after mods, and havent played Call of Pripyat yet, though I hear good things, still they arent RPGs in the common meaning (No character levels etc), but there is plenty of room for Roleplaying, and various factions. Might also try Boiling Point if your after an open Shooter/ RPG hybrid, never played much of it, but it seemed alright from what I saw.

I second summoner, how the hell did I not think of that. It's in my top 10 favourite games.
Also, though not an RPG... or sandbox... PLAY SACRIFICE. It's the embodiment of awesome.. and weird. One of the most unique games I've ever played.
Third person action RTS thing, where you are one guy (wizard) and can summon stuff and cast spells.(that doesn't sound that unique when i say it like this...) Weird ass creatures in that game. The game is hilarious too. It's the bloody full package!
