The list is good for your causal, who-cares-who-wins-i-want-to-see-something-cool-happen game. Try not to follow the standard vet-transport list unless you want to kill someone.
On the topic of sentintels (my spelling is off, idc its 40k), armoured sents are good for stuff like Combat Patrol (500 or less) as AV12 can work pretty well. However, scout sentintels are nice in that they outflank.
Drop the punisher, please. The idea of a gatling cannon on a tank is nice, but here it isnt good at all. The vanquisher can be usuable if given Pask...barely. Since you do have a small amount of infantry, use them wisely.
If you rly want to use a pure anti-infantry tank, try the eradicator, S6 AP 4 or 3, ignores cover. Give it a HF and HB side sponsons that way it can be a in your face tank.
Just suggestions, do what you want, its your army. Have fun

I wouldn't say your original list is awful, but it does have some flaws.
The veterans need special weapons. Veterans are good because they can bring alot of firepower, lasguns don't do it. 3 plasma or meltaguns is how you get the punch that makes veterans so popular.
Vanqusher is probably the worst model in the codex, its not good at taking out tanks, and that's its only job. On top of that, it costs a bunch. the vanq will only hit half of the time, and while a hit will almost always penetrate, it's only one shot that isn't ap1 so doing significant damage is unlikely.
Punisher can be fun, but bs3 s5 ap- means it won't do a whole lot. If you are going to take it, bring Pask and HB sponsons.
While I haven't used the eradicator, it seems OK and fun. Ignoring cover is never a bad thing. AP4 does mean it will almost completely loose its oomph against power armor, however.
Overall, its got a good idea (I love cramming as many tanks in as I can) but you tank choices could be better, Demo and Executioner are the "best" while the LRBT isn't a bad choice either. In a casual setting though the eradicator and punisher are iffy, but can be fun nonetheless.
One other suggestion is to drop a tank for more troops as you will be hurting with only two at 1k points

Okay, I've been tinkering with the list, coming up with LOTS of variations, and this is where we are now...
Primaris Psyker- 70
Veteran Squad (bolt pistol, plasma guns (x3), Chimera)- 172
Veteran Squad (bolt pistol, shotguns, meltaguns (x3), Chimera)- 157
Bane Wolf (HF)- 130
Scout Sentinel (autocannon)- 40
Leman Russ (lascannon, HS) - 175
Eradicator (HB sponsons)-180
Hydra-75
Total- 999
The hydra could be subbed out for carapace on the two squads and a lascannon on the sentinel (although I already have the autocannon sentinel)
thoughts?

Exterminators are kinda lame; autocannons are fine as long as they are cheap. They aren't cheap when they are stuck on a LR chassis.
I've no experience with the Punisher, but it is widely criticized, I guess the low AP is a big issue along with the low strength.
I've played a Demolisher due to model issues, it usually draws a great deal of fire which helps other things survive I guess. That's been pretty much it although it has on rare occasion performed well.
The LR to love is the Executioner. It's not great against vehicles, but it is magnificent against infantry.
Perhaps counter-intuitively, Russes aren't great against armor, they are best at dealing with Infantry.
Not low AP, no AP.
