Mono Molecular in 40k refers to a weapon with a edge that is a molecule thick, allowing for a extreme cut with a lot of penetration.

No, it isn't. The thickness of a milk jug is several billion molecules of some plastic or glass mixture, depending on what kind of milk jug we're talking about.

Powerfields are often described in the fluff as a blue-white glow, or arcing bands of power, similar to electricity. Kind of how the payload of a plasma weapon is generally considered to be a blue ball or bolt, it's just a commonly-accepted description of the technology. This is, of course, not universal, as Commissar Hark's plasma pistol in the Gaunt's Ghosts novels is often described as firing a beam or stream of plasma, killing several targets with every squeeze of the trigger.

And unless you have a very well furnished lab available, your milk jug won't contain only one type of molecule either.

Anyway, the blue could be from the field destroying dirt oxidised molecules on the surface of the blade, leaving it with a blue sheen for some reason.
