My main tables that I play on are a pair of 3x4 plywood sheets that are 5/8 inch thick. I bought two pairs of folding legs to screw into the bottom of them so they collapse down for transport. To keep them from separating (in games where they are both used to make a 4x6 table) I put a pair of metal hook-and-eye sets underneath them with one table getting the hooks, which lock into the "eyes" on the other table.
My surfaces are all fabric. It's infinitely easier on models and their paint-jobs than the old textured covering, and allows me to have a whole collection of terrain on one table. I currently have white and green felt for snow and grass, grey denim for urban terrain, black with painted 'star' dots for space games and a patterned brown for desert/ post-apocalyptic.

My ACTUAL table used to be a monstrosity made from 2x4's with a smooth press-board top that was a bit over 4' by a bit over 8' and about 32" high, but we took it down and replaced it with a bumper pool table (since there's not a lot of gaming at my place any more), but I'm thinking about finding something to cover the bumper pool top to keep it from getting messed up, so I can lay my tri-fold foam on top of it.

I play on a 4x7 table made of 4 closet doors (1'x7' each). I had a bunch of them that cam with the house, so I made a table. each pair is still on a hinge, so they fold up easily and can be stood up on the porch when not in use. If you have the space for storage and use of a larger table (as opposed to a 4x4) I highly recommend it. We usually only play on 5 or 6 feet of the table, but it's nice to have space on the side for books, dice, reinforcements and snacks. It's also large enough to split in half to run two simultaneous games of Song of Blades and Heroes or other warband skirmsh games.
The desert finish is simply a coat or two of white house paint followed by a few cans of Rustoleum Sandstone finish spray paint.
Most of my terrain (hills, cliffs, mining outpost, industry, etc) is made to fit the desert theme. so I don't have to worry much about other covers, though I'll probably pick up a green felt sheet at some point.

My tiny group has two tables. One at my friend's house, which is a battle mat set over two folding tables, much like some others listed here. It works pretty well, and has the advantage of being easy to set up and take down. The other is at my place. It's a two piece mdf board framed to fit over a plastic folding table. It was pretty easy to build and texture, but it is also pretty heavy, and a bear to haul up from the basement.

A 4x8 table made with 2 sheets of plywood and a frame of 2x6s laid out so that there is storage under the table surface for staging minis and holding drinks and such. I also have a 4x10 conference room table.
I have a few different Zuzzy mats and even though they are a pain in the ass to buy from they are great.

Have to agree with theunicorn, Zuzzy mats are awesome. They took about two months to arrive but when i chased them up for delivery they sent me a few freebies as well which was nice. Everyone said they took a long time to arrive so I didn't really mind. Seriously, give them a go, they look fantastic and for the price you won't be disappointed!
Also, theunicorn, that room looks awesome, I wish I had dedicated space for playing instead of playing room hockey everytime I want to play!

I usually play my games at Game Kastle in Santa Clara Ca and if you've seen any of jy2's battle reports them you've seen some of the terrain setups I have the pleasure of puhing my miniatures on.

if I can ever gather up my crap enough to get up there you might see me! I go there alot,m just usually not for gaming (haven't thrown dice for a game in a LONG while)
