My favorites (not the best just my favorite) are 1850-2k. I find that at those points level even losing feels satisfying because I got to field what I wanted and didn't really have to skimp on anything.

I enjoy playing at all points levels. The highest I've gone is ~5000 but my local club usually plays at 1850 points.

“Because we couldn’t be trusted. The Emperor needed a weapon that would never obey its own desires before those of the Imperium. He needed a weapon that would never bite the hand that feeds. The World Eaters were not that weapon. We’ve all drawn blades purely for the sake of shedding blood, and we’ve all felt the exultation of winning a war that never even needed to happen. We are not the tame, reliable pets that the Emperor wanted. The Wolves obey, when we would not. The Wolves can be trusted, when we never could. They have a discipline we lack, because their passions are not aflame with the Butcher’s Nails buzzing in the back of their skulls.
The Wolves will always come to heel when called. In that regard, it is a mystery why they name themselves wolves. They are tame, collared by the Emperor, obeying his every whim. But a wolf doesn’t behave that way. Only a dog does.
That is why we are the Eaters of Worlds, and the War Hounds no longer."

In my opinion, the dice don't start balancing their rolls with less than a 2500 point battle. In less than 2000, one bad set of saves can cost you the game.

A lot of <2k lists are one shot lists and can't really bring a whole strategy, but only a taste of it.

5k are some of the best games I have played because with strategic assets, it truly is impossible to list tailor and it becomes more of a deep tactics game at that point forcing you to think many moves ahead. Apoc only got better in 6th because the rules for what units can be with what and how far they should be from each other still apply for further balancing.

But the most fun games are always ones both you and your friends are comfortable at where they aren't forced to bring their whole army. A lot of times what makes it unfun is when someone has three times the amount of models you do and you have to bring everything. Regardless of any moral stance, when you play your friends enough you memorize what they have and at least a few thoughts drift that way when list making. Invalidate that and the game is infinitely more fun.

Hive Fleet Sorginak - 6,225 pts
Grey Knights and Inquisition - 8,084 pts
Steel Legion Mobile 666th - 3000 pts
Duke Sliscus' Private Strike Force - 4,161 pts
Deathwatch - 935 pts

This should probably be a poll.

We generally play between 1500 and 2000. Mainly due to time as a 1500 point game can be completed in less than 2 hours.

Going over that time and the excitement starts to drain for us.

Now, sometimes we do larger battles of around 4 to 5k points. However those are typically broken up into 2 or 3 sessions.
