I magnetized my sponsons on my Sicaran tank and the main turret so it spins and stays on if flipped upside down. Mostly so the turret doesn't fall off.
I also magnetize my leaders.
My sternguard sgt is magnetized at the shoulder for different arms and on some arms at the wrist for different weapons
I also magnetize special weapon troops. Ie plasma,melta gravgun guys.
I magnetized a lot of the weapons on my stormraven and stormtalons.
On my bikers I magnetize my special weapon guys.

It depends on the units. My Space Marines got no magnets. My Paladins got everything in the box magnetized.

How much time do you have? How organised are you? How pedantic on WYSIWYG?
Magnetising is not cheap, easy or quick. I second what a lot of the guys before hand were saying. Magnetise expensive ($) units with lots of options. My wraith guard got the full magnetisation treatment and it took me a couple hours per guy.
But, it is worth it.

It's pretty cheap if you already have some drills. You can buy tons of magnets for cheap online. Easy and quick, well that depends how you define easy and quick and depends what models you're talking about. I magnetised the spear/ CCW on 20 Saurus in the space of a few hours. Given it then took me another 15-20 hours to paint them, I don't think it's all that bad.

Fair enough, magnets are fairly cheap. When you use a lot on each individual model it does stack up though. Easy was wrong word. Tedious maybe.

It is a bit off a process but I think the advantages out weigh the extra time involved and if you do a little prep work it goes faster than it sounds. Plus I like doing the conversions and being able to change to any loadout you want is always a plus; especially if you're like me and prefer WYSIWYG to counts as.
I magnetize my troops and stuff for future use. With my gaunts they have 4 different options for weapons. Some games it's nice to use something different just for the sake of changing it up or to try new things out. In the case off my Fire Warriors it's not that big of a deal but if I want to run Carbines it's nice to know I can if I want. Plus I enjoy doing it

You should note that this is entirely based on the personal army you play, given that most tau players may magnetize their XV8s and riptides, both of which are in elites.
Why would one magnetize a tank turret? I haven't found a 40k tank turret that isn't either twist top or simply a slot like the razorback.

Another thing too is how much difficulty there will be in proxying.
I have a bunch of ogryn models. There's nothing else in the guard army that looks like ogryn. Ogryn just got the option in the new guard codex to be bullgryn. Am I going to go back and make all of my ogryn's weapons swappable...
... or am I going to put down my ogryn and say "they're bullgryn this game"?

Magnetising common weapon swaps on troops such as melta/plasma is a good idea imo. This results in ~1/5 space marines being magnetised for example. Saves money as you buy less models and saves space as you don't need to have entire models representing everything you might use as 1 model can be melta + plasma + flamer + lascannon + missile launcher etc. Saving space is especially good for transport as lugging around more than you need is never ideal. You don't need to magnetise the bulk of your troops as they'll never be anything but standard.
You can also magnetise the jump packs of assault infantry so you can run them with or without which is easy to do. If you commonly won't use assault squads but you want the option, you can magnetise the entire squads arms so they can use boltguns and be tacticals.
Generic HQs are a good idea to magnetise as you'll likely want to run completely different setups on them frequently.
