Which Fallout games? If only 3 and NV, I'd say grab 1 and 2 if you don't mind old games. If you don't mind old games, and can get them to work, don't forget Baldur's Gate I and II and Planescape Torment.

Onto some more modern ones. If you like South Park, their new game is pretty great. If not, either don't get it or wait for it to go on discount. Mass Effect, Dragon Age: Origins, Grimrock, Wasteland 2 might be good (it's in beta though), Mount and Blade: Warband is still a great game if stilla bit aged, Neverwinter is fun, KoToR (largely ignore the mmo unless you really want to just play the single player and ignore everything else. KOTOR I is great and whilst KOTOR II was, sadly, never allowed to be completed, it's still a great game despite being incomplete. Some mods exist to add many of the missing bits back into the game), Dark Souls (it's challenging but the difficulty is drummed up. It's a lovely atmospheric world that us, to me, an unforgettable world where you have to search for a deep mythology rather than it being force fed to you. Plus it is rewarding. Attacks are often slow, with weight and energy placed into them giving a rather methodical sensation to it all and I personally feel the music is phenomenal), it's spiritial predecessor, Demon's Souls, is also great, Witcher I and II, and Chrono Trigger.

I'll add more if I can think of them.

Ah yeah, Persona III and IV (if you have a PS2, backwards compatability PS3, or a PS vita), I still like some of the Tales games, Skies of Arcadia, Ultima, Odin Sphere, Golden Sun, I kinda like DQ8 but that might be because it was one of my first RPGS, Xenogear, Xenoblade Chronicles, Disgaea, Valkyria, Deus Ex, System Shock, Earthbound, Secret of Mana, and Chrono Trigger

Planetscape Torment is probably one of the most brilliant games ever. I would also second system shock 1 and system shock 2.

I'd have to say Mass effect trilogy, Kingdoms of Amalur: Reckoning, Witcher 1 & 2, Dishonored if you want something a bit different, Dark Souls 1 & 2 if you dont mind dying...a lot, Fable - especially now the aniversary edition is out, Star Wars Knights of the Old Republic 1 & 2, Ogre Battle 64: Person of Lordly Calibur - if you can get hold of it.
