This. Did the exact same thing back in the day but with a Long fang Squad to the point I was at my FLGS and left my models in the bunker  Didn't realise until got home and called them.

The way my mate and I normally do it, if its a optional thing (shooting with a squad say) we wont allow it...
If it's something that is a built in mechanic of the game, and not really optional - the psychic phase for example (yes we have accidentally missed this before and didn't realise until half way through the shooting phase) then we go back and do it.

This is pretty standard for people who play a lot of tournaments. It's an approach I am very comfortable with, although in friendly games I will usually be a little more lenient.

Once, I forgot to include the 5th edition rule "No armour saves against Monstrous Creatures" Ignoring that made me win.

What about in this case:
Grey Knight player shoots a gun at my grot artillery unit. He says, hey I am wounding on 4's. So it is like 5 wounds or something. So I roll my saves and fail like 3 of them. While I am allocating wounds he says those wounds cause ID, since he is shooting a force weapon. I remove 3 models. Then I get to thinking about, and say wait a second, so you are shooting psilencer's? He was and I reroll my saves (which is only one or two now) and put my models back on the table. He was kinda butt hurt about me rerolling my saves.
You think that was fair?
This happened in a tournament.
To answer the op, in general I almost always let people rewind time if they forgot something with in the same turn.

It really depends.
IF:
You declared, after learning about the instant-death, that you would have gone to ground, then I'd only let you take back your roll if I hadn't made my list available to you AND didn't make it clear which unit was shooting at you. That's your fault for not paying attention. However, if I didn't make my list available to you, or I didn't make it clear which of my units was shooting at you, then there's a good reason why you may not have been aware of the Instant Death, and I'd let you go to ground for the reroll.
However, IF:
You made armour saves improperly (you made them on 5+ when it should have been on 4+, or you made them on 4+ when it should've been 5+), then I should definitely allow you to reroll, but ONLY if the result is not still showing on the table and neither of us can remember what the result of the die rolls were.

well, you forgot something IE made a mistake, and mistakes define us as players as much as our smarter moves so generally in that setting I am less lenient with take backs, or re dos, mulligans, whatever you want to call them
I play chess the same way I play 40k, if i am playing someone inexperienced, in an informal setting, I allow take backs, I coach you on your moves *are you sure you want to do that?*, tell them about the en passant rule, or be forgiving when they move things and take their hands off them
at a chess tournament where people are actually competing to measure themselves against others? no flipping way you get to take back anything, and you are expected to play the game you actually played, not the game you would have played in 20/20 hindsight.

I think I should be more specific. Psislincers are strength 4 ap -, so they wound Artillery on 6's not 4's. So I rolled more saves then I should have. The To Wound dice were still on the table.

Ah, well yeah you should definitely reroll. An error was made, and needs to be corrected. Best yet, you have the exact point where the error was made - so rerolling from that point is precisely what to do.
The only case where I wouldn't rewind this is if we went a full turn before discovering the error, but your situation seems pretty clear then that you did the right thing.
EDIT: You still should always question what's shooting, and why it's wounding on whatever numbers it's wounding on. Don't just take their word for it, because lots of players make honest mistakes all the time.

Your opponent is not being reasonable here. They made a mistake and claimed too many wounds, they have no right to get upset that you want to correct their mistake. I'd pay careful attention to this player in the future and make sure that they don't "accidentally" make similar "mistakes" in their favor in other situations.
