The board we play on is a urban city map, I have one of those fat mats from frontline, we use a fair bit of terrain on there with plenty of building to disrupt line of sight without reaching the point where the board feels crowded. In general we play maelstrom missions, through we do occasionally do a custom scenario e.g. hold a certain area, last X amount of turns etc.
As for my typical army list I don't really have one, since he is the only person I play, since the game store I used to manage shutdown, and none of my list have at all been effective so I keep trying to change the list to do better. That being said I can only bring my
Ig in smaller point games since I only have 8 tanks available to me, although he does occasionally let me borrow a couple of his tanks so I can run 10-11 of them, we are very relaxed in terms of proxing for my
IG tanks since they are all basically the same general shape. I typically try bringing a wyvern or two, a couple Leman Russ's (either bare bones, the triple plasma cannon, or the demolisher cannon) , and occasionally a hell hound variant. I used to bring some earthshakers and other powerful artillery but with their minimum range I found them all but useless due to how close he is by turn 1.
Actually you could be battle forged. You just need to run the armour battle group from Imperial Armour 1 from forgeworld. Though it probably won't change much since I think I have some ideas what your problems are.
One of the first things that occurs to me from what you have said of 8 tank available and perhaps 10-11 tanks (including wyverns, etc.) I have a funny feeling that you may be playing a bit above your pts. Ideally you would want to fill out with tanks with minimal wargear and upgrades (read as none). With a proper setup where you keep the important tanks behind
LoS blocking terrain and use the less important tanks (anything not an executioner, wyvern, or punisher in that order) up front to take the alpha strike shooting you should be able to deal plenty of damage to keep you in the game after the opponent drops down.
Your biggest problem though is a complete lack of counter assault combined with the opponent's drop alpha strike. If you turtle up then you bunch up for assaults and if you disperse the shooting gets you and probably gets rear armour too. The
IG vehicles for the most part are just not cheap enough to loose 3-4 vehicles a turn like you probably are, thus you loose the game and probably get tabled.
There are a few different ways to counter act this. However the best ways would require one of three things; 1) allies, 2) new models (probably an imperial knight or infantry), or 3) putting enough cheap tanks on the board to accept loses. You have indicated that 1 and 2 are a no go so I will talk about option 3. However the optimal way to do this is using Imperial Armour Vraks and taking a Renegades and Heretics army with some clever modeling tricks to "expand" your collection. If you don't like forgeworld then there is only one more thing I can think of and it will only slightly help.
You said you have earthshakers. Can you remove the gun platform from the model? If you can you can fairly simply convert the bases to wyverns and use the gun platforms as counts as earthshaker heavy artillery carriages. Then you would just need 4 infantry per carriage (which you could substitute warriors for to double the number of units you could field. If you do this and take them as Renegades of Vraks units you should be able to field 3+ "wyverns" (55 pts each), 3+ heavy artillery carriages (55 pts each), 4+ naked executioners (145 pts each), and 4+ Eradicators (110 pts each) at 1500 pts. This would give you enough tanks and artillery that you can just disperse them throughout your deployment zone and the opponent will struggle to deal enough damage to not get their entire skyhammer and libby con annihilated next turn. You will still struggle to claim objectives and get points without any fast assault units but you will at least have close games.
BTW this army is actually really good if you get 4 units of 3 spawn and add them to it. The reason that it is renegades is that the tanks are cheaper as they are BS2 rather than BS3. This is important as you will bleed destroyed tanks unless and until you add some sort of board control elements to your list (which you cannot realistically do with an all tank army).
