You could ask the same question of almost all science-fiction IPs. The answer? Because treating space like a flat-plane ocean is more visually interesting. As it isn't, most vessels that would meet would appear to be haphazardly arranged around the area, as if their pilots were drunken fools. While this would be scientifically accurate, it's visually odd that one ship (to its own perspective "straight on course and balanced true") is upside down and cocked at a 55 degree angle to another ship (which is also, to its own perspective, perfectly aligned).

It is best to be a pessimist. You are usually right and, when you're wrong, you're pleasantly surprised.
