This isn't as fun of an answer, but I have seen some older buildings in my area (mostly old government buildings) that use a "V" in place of a "U" in spelling out some words or names, like "COUNTY COURTHOUSE" is "COVNTY COVRTHOVSE". In which case, the "V" might just be a "U" for Ultramarines.

Also, in Latin, a "V" makes a "W" sound, so maybe it's a "W" for something?

here's an idea, do we know the name of the guy who did the Gulliman sculpt? just occured to me this might be a clever addition of a signature.

Heh, that's a nice theory - but actually it's because V is derived from the Greek Upsilon Character 'Y', just with no stem. The Phonecian alphabet, from which Greek is derived, was popular not because it was easy to carve (For example the complex hieroglyphs are proof of curved script carving on a large scale), but rather because it was easy to identify one character with one sound - which is exactly the same reason we still use a Phonecian derived alphabet today.

Linguistics lesson over ( ), I think it's reasonable to assume it's simply V for Victory. I can't think of any reason for it to be linked to 5, nor do I think it's a 'V' for 'Vltramarines', as his whole aesthetic is curved - no reason to break it up by putting in a random angular U.

the V for victory also has a bit of a Churchellian vibe to it and GW IS British

It's just same Ultramarine 'upsilon' symbol. Latin 'Ʊ' == greek 'Υ'.
