I'm of two minds on the original question because it encompasses two different problems.
On poseability I actually think the new kits are mostly fine. Intercessors only have five "body poses" but there's enough play and extra bits in the arms and heads that multiple units don't look too similar. I don't particularly count the big boxed set models like Shadow Spear in that even though a lot of them have no room for adjustment at all because you'll also (probably) only ever buy one of that box and the individual squad kits will be different.
On kit-bashing ... ok, leaving aside the baffling state of things where Intercessor Sergeants having melee options but Reivers/Infiltrators/Obsectors(?) don't, not having all the options in the box isn't exactly a new phenomenon for Marine kits. Want to field a solid Lascannon Devastator squad? There's only two of those in the box. Want a Tactical squad with a Heavy weapon besides a Missile Launcher? There's a bunch of extras in the Devastator box, hint hint. Bike squads have a bunch of options and none of them are in the box.
If you're trying to build a Primaris-only army it's annoying that the most cost-efficient way to equip your Intercessor Sergeants is probably still an Assault Marine box, but it shouldn't be a surprise to anyone who isn't totally new to the hobby.
