Yeah, this is what I do, as dice are usually faster than an app for numbers somewhere around 20. A unit of MANz or nobz attacking are still easily done with regular dice, but as soon as it's a large unit of boyz, warbikers, lootaz or similar shooting or fighting, I use the dice app.

7 Ork facts people always get wrong:
Ragnar did not win against Thrakka, but suffered two crushing defeats within a few days of each other.
A lasgun is powerful enough to sever an ork's appendage or head in a single, well aimed shot.
Orks meks have a better understanding of electrics and mechanics than most Tech Priests.

If there are units you constantly look up in the codex, make little reference cards for them. I did that for my characters and dreadnought. Brilliant time saver.
Units you've memorised don't need cards. If you make them out of a same of completeness, they just get in the way of finding the ones you do need. Same goes for stratagems. Only keep the cards you need on the table.
Also, book marks and sticky tabs are brilliant. I put sticky tabs on all my books these days. I'm sure there's a way to add a ribbon to a book, haven't tried that yet though.

Although it is great to see all these tips to help you out, the answer to your question is Yes, playing 90 boyz and 80 grotz will slow down your game. Whoever you are.
There are other options to play Orks that won't slow you down (as much). But as you can get the boyz/grotz at a bargain, it's up to you to decide what is possible for you.
I recently played some "tin headz" orks:
Big Mek in mega armour KFF, Big mek with KFF.
2x 10 Gretchin
2x 4 MegaNobz
2x Bonebreaka
2x Deff Dread
2x Killa Kan
1x Morkanaut
2x Dakkajet
No tournament list, but I'm having a blast playing them
You park the Gretchin on an objective and then have 9 models to move around (before disembarking and krumpin' some enemy models). Fast playing without even painting them red

We only play friendly at my LGS. With my Orks I just measure the front one and the back one. Then pile the others in between the 2. We do start to watch the movement later in the game when a lot of orks are dead but I can play fast with them.

Practice playing on a chess clock. Best way to learn to play fast. Entirely possible with Orks. Only way to speed up the game, is getting games in and practicing.

Most Tournament players I've come across running the 180 Boyz / 45 Lootas use the oval movement trays with magnets. They can crush a 2k game out within the time but their opponent also needs to be fairly quick about things.\
The two guys I know that do this are a master of multicolored dice or use the dice roller app for the Lootas/Boyz. Movement is much faster than the dice rolling for their armies.
However infantry Guard vs Orks with 400-500 models on the table is never going to finish in 5 turns at a GT
Like the guy above me said - chess clock is the way to go. This helped me out playing infantry heavy lists in Warmachine

I was thinking of adding in a group of 50 small cheap dice, for whipping out the rolls quickly, a different size and color to the ones I usually use.
