I tend to leave my Drukhari vehicles fairly stripped-down. No optional spikes, trophies, chains, etc. They're already hard enough to carry due to their shape.
Likewise, I built my SoB exorcists without the cherubs. I don't like the look of them, and they make the model too fragile.

The grenades and other bits Guardians and DA have I have never bothered putting on but those bits have been excellent for kitbashes and Exodite conversions so I'm glad I "saved" them.
Did the same with the cockpits of all of my grav tanks and planes. They make cool bodies for the old jet bikes and the CHE pilot heads are too good to pass up for conversion opportunities.
All of my space marines have their bits though, as they're my "fluffy" army project. Tyranids had enough going on with them so I never bothered with adrenal glands or toxin sacs.

very few ork players from what i have seen have put the rear gunners in the ork battlewagon, you throw those bodies on bases and add other ork weapons for extra boyz

The legs of the Mechanicus Ironstriders have lots of small inserts that need to be inserted at exactly the correct angle or they don't go all the way in (and don't come out again either).
Or you can just shave the pegs off and insert them any old way since it makes absolutely no difference to the model.

The one that immediately springs to mind wasn't an omission by choice. It's the small heart that goes on the chest of the Triumph of St. Katherine. I was going to put it on, had it in a pair of tweezers ready to apply glue and position it and... ping. Off it went into the ether somewhere, nowhere to be found. I ended up greenstuffing the hole it was supposed to stick into to fill in and re-sculpt the armour.
Otherwise, I tend not to use too many of the extra decorative bits that you get in various kits like purity seals, holstered pistols and the like. I'm absolutely fine with those things when they're sculpted on the model, but more often than not when they're separate pieces that you can glue wherever I find they tend to go on fairly awkwardly and stick out more than the sculpted-on ones. So I normally don't bother.
